Vegetable fritters (onions, peppers, broccoli, snow peas, mushrooms, mozzarella cheese, and who knows what else, in a fried cornbread) with a spring greens salad and lemonade.

Last night I made a homemade chicken pot pie (me, hubby and daughter) and chicken soup (son) with the leftover chicken, potatoes and vegetables in the fridge. For some reason, my son doesn't like the pie crust in the chicken pot pie even though the soup has the exact same ingredients (no crust is all).

Being as it's Super Bowl Sunday, just a lot of munchie-type food.

On the "menu":

Pizza rolls
chicken wings
chili cheese dip
cocktail smokies and/or meatballs
mozzarella sticks
veggies with spinach dip
fruit salad

We [Our area of Maryland] received 30 inches of snow in 29 continuous hours, and calling for more "substantial accumulations" Tuesday night into Wed.. So last night we had Creamed Chip Beef on Grand-Biscuits, and tonight will be Chicken'n'Dumplings (comfort food, to me).

Barbecued Chicken, Couscous, Broccoli & Garlic Bread.

Sorry about all that snow, Pat. It's 58 degrees here...cold for us, but still warm enough to grill outside.

If ya'll want to get rid of some of that snow, you could go ahead and ship it down here. In fact, wait a month - I'd love to see the Sipsey Wilderness covered with snow.

Oh, yeah. For lunch I had a couple of egg salad sandwiches but tonight was Michelina Lean night so I just nuked a frozen dinner.

What's sweet potato 'hash'? I know what sweet potato is, just not the hash.

Chicken cordon bleu, roast veggies.

More chicken leftover from the whole chicken I made on Friday. We certainly have gotten our money's worth out of that $5.50 chicken. I'm using the chicken meat to make an alfredo chicken with broccoli and noodles. This will be the last of it.

How was that? I have thought of making my pot pie that way but always end up with the pie crust instead.

I made this with rice instead of noodles, and the family loved it. My son, who usually doesn't eat rice, ate at least a cup and a half of rice. There was nothing left.

Come on over. I usually make too much, anyway. Of course, making this dish depends on a trip to the store for a few ingredients....hopefully I'll make it there today.

I've never made it any other way. I guess it depends on what you and your family like... and how lazy you are. LOL!

Biscuit dough is good but we found we like crescent dough even better!

Saffron rice. . . do you buy saffron? or are you using a seasoning packet of some kind?

I like saffron but it is so pricey! Any inexpensive sources?

I just use the packages of saffron (aka "yellow") rice.

I wouldn't have a clue where to even buy saffron around here. I know it's incredibly expensive.
